Cookies and Cream Cupcakes

These cupcakes were for Tina's birthday. Sara found the recipe for the cupcakes about a week before Tina mentioned the theme of "cookies and cream," so I felt like it was meant to happen! Haha.

I found my camera memory card, so I was able to take pictures as I went. I forgot to take one of everything I needed though. Oops! You'll have to forgive me.

So, since everything was 'cookies and cream' and therefore black and white, I bought these special cupcake holders:


They ended up working out quite well. They were the thicker lined kind so that the cupcake doesn't change the color of the design or anything.

First step with the cupcakes was to split 24 Oreos and place the side with the cream attached  into the cupcake holder (cream side up). To do this easily, I put the Oreos in the freezer for a bit. It make the cream more likely to stick to one side, and then I used a knife to cut them.


 Next, you take your flour (2 1/4 cups),
 add your baking powder (1 tsp)
 and add your salt (1/2 tsp)
Mix them together with a fork and set the bowl aside.
In another bowl, start by mixing together your sugar (1 2/3 cup)


Add your butter (1 stick)


And mix them with an electric mixer for about 2 minutes, until it becomes fluffy:

  You then add the egg whites (three large), one at a time, mixing in between.




 Next, blend in 2 tsp vanilla:

With the mixer on a low speed, add in some of the dry mix from earlier:

Then add in the milk (1 cup).


And then add the rest of the dry mix.


 Finally, add in about 20 Oreos cut into fourths.




Fold this in together with a spatula.


I forgot to take pictures after I put the batter into the liners, before putting them in the over, but I did take some while they were in the oven:


While they were in the oven, I took the other halves of the cookies from the beginning (when I put the cream side into the cupcake liner):

 and put them in a giant ziplock bag and used a rolling pin to crush them finely.

They were a little done when they came out. =/






For the topping, I decided to use cool whip:


I then mixed in the crushed Oreos from the ziplock bag.


I used a round tip to pipe the whip cream on top.




Finally, I cut 12 Oreos in half and placed half an Oreo on top of each cupcake.
